Getting more vegetables into my body can seem like a chore. Sometimes the thought of making another salad, chewing another salad, and trying to digest another salad is just too much – and so sometimes chocolate for dinner just happens (am I right?). There are a billion and two tricks out there for getting more veggies into your meals, but I have to say – what works for me is not having 3 green smoothies a day, nor is it hiding veggies in everything I make (though that has proven to be pretty effective). Seriously, the most sustainable veggie habit I’ve started is eating Veggies for Breakfast!

It still is a habit I am in the process of forming, but every time I make a breakfast with veggies, I am pleasantly surprised and delighted at how good it feels. Having veggies first thing may seem strange, especially to the die-hard cereal crowd, but it actually feels so natural – as if you’d been doing it all your life, but had just forgotten.

Benefits to having veggies for breakfast include: a ton of fibre to keep you satiated and your bowels moving appropriately, lots of antioxidants and essential phytochemicals, protein, healthy fats, calcium and other minerals, vitamins including C and K1, and so much more. Dr. Terry Wahls recommends 9 cups of vegetables per day (especially if you are trying to heal inflammation, chronic illness, autoimmunity, etc.)! Including veggies with breakfast makes it so much easier to get enough throughout your day, without being left struggling to get in enough at dinner.
