Dark Chocolate Banana Pops | Vegan + Paleo
We are having a record-breaking heat wave here in British Columbia, so I have been living on cold salads and meats, iced coffee and herbal tea, and water with electrolytes added. I was craving a sweet treat, but didn’t want something that would spike my blood sugar. I decided to make some Dark Chocolate Banana Pops – low sugar, decent amounts of fibre to keep blood sugar stable, and potassium and magnesium to aid hydration and avoid muscle cramps. Perfect!
Dark Chocolate Banana Pops

3 large bananas, peeled
50g (1/2 bar) dark chocolate (70% – 90% cocoa)
2 Tbsp crushed salted pistachios (or any topping of your choice)
Method
- Prepare a small cookie sheet with a layer of parchment paper. Place chopped nuts or other toppings in a shallow dish and set aside.
- Slice bananas in half (width-ways), and insert a popsicle stick into the sliced ends.
- Break or chop chocolate into pieces and melt carefully over low heat (in a double boiler is best, but not necessary). Once melted, dip bananas in to the chocolate, using a spoon to coat if needed. Lightly roll the chocolate-coated banana pop in your nuts or chosen toppings or sprinkle them onto the chocolate.
- Repeat with each banana, placing them on your parchment-lined sheet. Any extra chocolate can be drizzled over top! Place tray in the freezer for 2-3 hrs.
- Cool off with your frozen treat!
