Chocolate Strawberry Loves

Whether you have romantic plans this Valentine’s Day or not, here is a lovely and familiar couple in a form that won’t cause you to break your health, your stride, your teeth, your bank, or your heart. Instead of a sugar-induced roller-coaster crash, with these Chocolate Strawberry Loves, you will be able to ride safely through your day, fully intact. Doesn’t matter what plans you have (romantic? epic? adventuresome? cultured? lazy Sunday?), you will be well fuelled to do just about anything!

Like most of my recipes thus far, these melt-away “loves” are highly customizable…you choose your fats, your sweetness, your fillings…

They don’t even have to be chocolate – try subbing carob powder or compliant carob chips if you want to make these AIP-friendly! Also omit maca for AIP.

This recipe is paleo, vegan, keto, low-allergen, low-sugar, etc. You can sweeten them more as you desire.

Biggest rule – enjoy your non-guilty pleasure!

Raspberries or cherries are also lovely options!

Ingredients

  • 1/2 c. coconut manna

  • 1/4 c. cacao butter

  • 1/4 c. coconut oil

  • 100g dark chocolate bar (cocoa powder works too – you need approx. 5 Tbsp + 1 Tbsp sweetener)

  • Handful chopped strawberries (or filling of choice)

  • 1 tsp vanilla

  • 1 Tbsp maca powder, optional

Method

  • In a small saucepan, gently melt coconut and cacao butter, chocolate and oil until liquified. Add vanilla and whisk in maca if desired.
  • Divide strawberry pieces into silicone moulds, mini-muffin tins or container of choice, then spoon melted chocolate mixture over top. Refrigerate or freeze until solid, about 60 mins.
  • I store these in the freezer as they melt pretty quick! Take out servings as desired and allow to thaw for about 10 minutes before enjoying.
